Express Meal

Express meal: Line fish, tomato, couscous and baby basil

INGREDIENTS

  • Sustainable line fish 120g
  • 100g cous cous
  • 200ml hot chicken stock
  • 1 tbsp. tomato puree
  • Tabasco to taste
  • 1 tbsp. olive oil
  • Jalepeno flavoured olive oil
  • Lemon juice
  • Salt and pepper
  • Couple of basil leaves
  • Lemon juice
  • 1-2 Tbsps.bButter
  • 5 cherry tomatoes – quartered
  • 1/2 red onion – finely diced

 

METHOD

  1. Place fish on paper towel to remove excess moisture.
  2. Add olive oil, couscous, seasoning, hot sauce, tomato paste and jalepeno flavoured olive oil to a mixing bowl and mix well.
  3. Pour hot chicken stock over and cover with cling film. Set aside for 15 minutes. (Half way through mix with a fork to roughen up. Recover and set aside to continue steaming). Add a squeeze of lemon before serving.
  4. Heat non stick pan on medium high heat. Add glug of olive oil. Fry for about 1 ½ minutes on each side.
  5. When turning the first time, add a knob of butter and cook for the last 1 ½ minutes. Remove from pan and pour excess butter over fish.
  6. Add diced onions, cherry tomatoes, basil and seasoning to a bowl, mix well.
  7. Stir through the couscous.
  8. Pile onto a plate, top with fish and pan juices and serve.

Recipe 1

Recipe 1: Salt baked celeriac, pear, walnut, blue cheese

INGREDIENTS

 

  • 4 small celeriac – peeled (keep the peels)
  • 1kg flour
  • 1kg salt
  • Bunch of thyme
  • Water to mix
  • 500g walnuts
  • 250g castor sugar
  • 2-3 Pears
  • 100g Gorgonzola
  • 1/2 cup cream
  • 1/2 cup chicken stock
  • 2 tbsp butter
  • Wild chive flowers for serving *optional

 

METHOD

PRE-PREP:

  1. Add the salt, flour and thyme to a food processor and while the motor is running add enough water to make a stiff pastry. Roll into ball.
  2. Divide into 4 balls and roll each ball out until its about 5mm thick.
  3. Peel the celeriac and cover in pastry, trimming the excess pastry and squeezing the ends together to make sure it sticks together and the whole celeriac is covered. Pop onto a baking tray and bake for 45 minutes at 180C.
  4. Cook the celeriac skins in the cream and chicken stock.
  5. Add butter, blend and season.
  6. Spoon into squeeze bottle.
  7. Melt castor sugar in pot to make caramel.
  8. Add the walnuts. Stir through.
  9. Lay onto non-stick sheet, season with salt and leave to harden. Set aside.
  10. When set, break up with a knife and chop.
  11. Remove from oven and leave in salt crust to rest for another 20 minutes.

FINISHING:

  1. Peel and slice pears and toss in olive oil and salt
  2. Crack open salt crust, remove celeriac and slice to serve.
  3. Toss in olive oil.
  4. Assemble with pears, cheese and walnut caramel.
  5. Serve

Recipe 2: Bavette, baked potato puree, microwaved white onions, grain mustard and asparagus 

INGREDIENTS

 

  • 2kg Bavette (Skirt steak)
  • 2Tbs grain mustard
  • Salt
  • Pepper
  • 3-4 tbsp olive oil
  • 5 large baking potatoes
  • 500g sea salt
  • 250ml cream
  • 400g butter
  • splash of milk
  • salt
  • 4 white onions, peeled and quartered (keep root intact)
  • Olive oil
  • 20 Asparagus spears – stem peeled, blanched
  • 400g purple string beans, blanched
  • 2 black radishes
  • 2 tbsp sugar
  • 1 tbsp salt
  • 1/4 cup white vinegar
  • 2 tbsp water

 

METHOD

PRE-PREP:

  1. Rub steak with mustard, salt, pepper and olive oil and set aside to marinade.
  2. Bake potatoes on a bed of salt until soft.
  3. Bake the bavette at 130C for an hour.
  4. Heat cream with ½ butter
  5. Scoop steaming potato flesh out of its skin and place in ricer, push through into warm cream
  6. Return to medium heat, whisk in remaining cold butter
  7. Season and set aside, covering with a butter paper if you have.
  8. Place empty skins onto baking tray and return to oven for another hour. When dry, blend in food processor with tablespoon of salt to form a potato salt.
  9. Set aside for later use.
  10. Slice the black radishes super thin on a mandolin.
  11. Heat the sugar, salt, vinegar and water until just simmering, take off the heat and pour over the black radishes to make a quick pickle.

FINISHING:

  1. Put onions in microwave proof dish
  2. Drizzle with olive oil and season
  3. Clingfilm and microwave for four minutes.
  4. Remove, shake to recoat in oil. Microwave for another 4 minutes.
  5. Remove from microwave. Do not remove clingfilm. Set aside for at least 10 minutes before removing clingfilm.To cook steak – grill over high heat for total of 15 minutes, turning constantly.
  6. Heat 4 non-stick pans with a drizzle of olive oil each.
  7. Sear bavette for a couple of minutes on a side until you have a crust set aside.
  8. Add the raw asparagus to the pan juices and cook for 30 seconds, add the blanched beans.
  9. Reheat potatoes, adding a splash of cold milk.
  10. Toss asparagus through melted butter
  11. When reheating potatoes add splash cold milk.
  12. Blanche asparagus and drain.
  13. Toss asparagus through melted butter
  14. Slice the bavette across the grain.
  15. Plate with potato salt.

Recipe 3: Rice Pudding with Mango

INGREDIENTS
Rice Pudding

  • 2 cups short-grained dessert rice
  • 2 cups single cream
  • 2 cups milk
  • 1 cup castor sugar
  • 2 tbsp brown sugar
  • Vanilla paste
  • Cardamom seed

Mango Mousse

  • 1kg of mango puree
  • 2 tbsp icing sugar
  • 5 leaves gelatine, soaked
  • Juice of 2 limes
  • 1 cup crème fraiche
  • Edible flowers – nasturtiums *optional

PRE-PREP:

  1. Toast the cardamon, add milk, cream and vanilla paste.
  2. Add sugar, stir to dissolve. Bring to the boil.
  3. Wash rice till water runs clear.
  4. Add rice to infused cream.
  5. Cover and bake at 130C for 40 minutes
  6. Remove lid, add a dash of cream if necessary.
  7. Sprinkle with brown sugar and bake for another 20 minutes till golden crust forms.
  8. Put mango puree into large pot and heat to reduce to half the quantity
  9. Remove from heat. Add soaked gelatine.
  10. Place into container and chill.
  11. To the creme fraiche add the lime juice, icing sugar and 2/3 of the mango jelly
  12. Pour into piping bag and chill until needed.

FINISHING:

  1. Plate.

Express meal: Prawn and Watermelon Salad

INGREDIENTS

  • 8 good sized prawns, deveined, butterflied
  • Handful of cubed, deseeded watermelon
  • Juice and zest of 1 lime
  • Bunch of parsley
  • Bunch of mint
  • Bunch of coriander
  • 1 red chilli – split
  • 50g toasted cashews – chopped
  • Olive oil
  • Salt and pepper

 

METHOD

  1. Heat a non-stick pan with a splash of oil.
  2. Coat the prawns in oil and add to the hot pan, season and add the chilli and watermelon.
  3. Add a squeeze of lime and toss through the herbs.
  4. Tip it onto your plate.
  5. Garnish with bruised mint and chopped, toasted cashews.

Recipe 1: Scallop, cauliflower and white chocolate

INGREDIENTS

 

  • 16 Large scallops
  • 3 Tbsp butter
  • Cauliflowe puree
  • 200g butter
  • 100g of white chocolate
  • 2 Tbsps, butter
  • Curry salt
  • 1tbsp curry powder
  • 1 tbsp salt
  • Vinaigrette
  • 1/2 cup chill olive oil
  • Salt
  • Juice of 2 lemons
  • 8 radishes, sliced on a mandolin
  • Pea shoots

 

METHOD

PRE-PREP:

  1. Cook grated cauliflower in the butter.
  2. Put into blender and blitz.
  3. Add white chocolate and blend till smooth.
  4. Set aside to reheat later.
  5. Mix curry powder and salt together. Toast in pan. Set aside.

FINISHING:

  1. Heat butter in a pan, add the macadamia nuts and toast in the foaming butter. Set aside to use later.
  2. Make a viniagrette by mixing the olive oil, salt and lemon juice, Add the radish and mix well.
  3. Season scallops with curry salt and drizzle with olive oil.
  4. Add a glug of olive oil to a non-stick pan and sear the scallops for 20 seconds each side. Add a knob of butter and baste the scallops well. Remove from pan.
  5. Plate with scallops, mash, microplaned macadamia over the top.

Recipe 2: Braised beef short rib, snails, garlic parsley 

INGREDIENTS

 

  • 3kg Beef Short rib
  • 2 litres veal stock
  • 5 whole heads garlic
  • 2 shallots, halved
  • Couple of sprigs of rosemary
  • Couple of sprigs of thyme
  • 48 snails (6pp) washed and drained. chopped
  • 2 bunches flat leaf parsley
  • Loaf of ciabatta, torn into rough chunks
  • 2-2.5 kg centre cut beef billet
  • Salt and coarse pepper

 

METHOD

PRE-PREP:

  1. Heat oil in a large pot and season and sear short rib in large pot in batches.
  2. Add 1 head garlic (halved), shallots, rosemary and thyme to the pot and add back all the short rib, including all the pan juices. Add enough hot veal stock to cover. Braise for 4 hours.
  3. Remove from liquid and place on tray to rest, remove any grit and bones.
  4. Reduce braising liquid to a glaze.

GARLIC AND PARSLEY PASTE

  1. Wrap garlic heads individually in tin foil. Bake in oven at 160 degrees for 2 hours.
  2. Remove and squeeze out garlic while warm.
  3. Chop parsley and mix into garlic paste.
  4. Add drizzle of olive oil and mix.
  5. Set aside for later

FINISHING:

  1. Heat non stick pan and olive oil
  2. Fry ciabatta chunks till crisp
  3. Season the fillet well with salt and pepper
  4. Get two pans smoking hot, add a drizzle of olive oil
  5. Add the fillet and sear, 3-5 minutes on a side or until golden
  6. Take off the heat and leave to rest.
  7. Portion the short rib. Keep aside the off cuts or any little pieces that fell off the bone.
  8. Heat non stick pan over medium heat.
  9. Add olive oil and snails and sauté for a minute.
  10. Add a generous amount garlic and parsley mix, Coat snails and remove from pan.
  11. Reheat croutons in the oven, stir through a tbsp of garlic and parsley paste
  12. Cook the short rib off cuts in olive oil to crisp up a little.
  13. Plate and serve

Recipe 3: Rice Milk Ice cream and green tea sponge

INGREDIENTS
Sponge

  • 250g soft butter
  • 250g castor sugar
  • 450g self-raising flour
  • 2 whole eggs
  • 4 green tea bags – leaves removed
  • 1 tsp cinnamon

Ice Cream

  • 250ml cream
  • 250ml rice milk
  • 200g castor sugar
  • 12 egg yolks
  • 1kg dry ice – to finish

PRE-PREP:
Sponge

  1. Pre heat oven to 170 degrees
  2. Add tea leaves to flour
  3. Cream sugar and butter
  4. Add half flour and 1 egg – beat ill smooth
  5. Add reminder flour and other egg – beat till smooth
  6. Add milk, mix
  7. Pour into greased, lined baking tray.
  8. Bake at 170 for 15 minutes testing with skewer
  9. When cooked, remove from oven and set aside to cool.
  10. Once cooled, cut into squares and set aside for later.

 
PRE-PREP:
Ice Cream

  1. Heat milk and cream
  2. Add the sugar to egg yolks and whisk till pale
  3. Pour milk and cream mix into yolks
  4. Return to medium heat stirring continuously till mixture coats back of spoon
  5. Remove from heat. Pass through a sieve into a bowl. Chill till needed.

FINISHING:

  1. Make sweet croutons by cutting the cake into 2cmx2cm cubes.
  2. Toast in a hot oven for about 10 minutes.
  3. Blend dry ice into a powder – using food processor.
  4. Put chilled ice cream custard into KitchenAid.
  5. Whisk on medium speed, spooning in dry ice powder.
  6. Increase speed as ice cream sets.
  7. Serve on top of cubed green tea sponge.

Express meal: Ceps on toast

INGREDIENTS

  • A couple of fresh porcinis
  • Ciabatta
  • 1 clove garlic
  • 2 Tbsps. butter
  • 1-2 Tbsps. olive oil
  • Salt
  • Crème fraiche
  • 1 shallot – sliced
  • 2 Tbsp. grated pecorino
  • 1-2 fresh thyme sprigs
  • a handful of fresh wood sorrel

 

METHOD

  1. Heat a non-stick pan over a medium to high heat.
  2. Add a good glug of olive oil.
  3. Toast ciabatta, and then rub with garlic.
  4. Slice mushrooms and add to pan.
  5. Sauté for 30 seconds to a minute.
  6. Mandolin or finely slice shallots and add to the mushrooms. Add thyme . Season with salt.
  7. Add butter and cook for another minute or so.
  8. Add crème fraiche and let it melt into the mushrooms.
  9. Add a grating of pecorino.
  10. Finish with wood sorrel.
  11. Serve on toasted ciabatta with finely grated/microplaned pecorino.
  12. Finish with a grating of raw cep stems.

Recipe 1:  Spelt Risotto, pickled turnip and braised ox tongue

INGREDIENTS

 

BRAISED TONGUE

  • Olive oil
  • Salt
  • 1 ox tongue
  • 1 head garlic – halved
  • 1 onion – quartered
  • 1 bay leaf
  • Sprigs of thyme
  • 1 Tbsp. coriander seeds
  • 1 tsp. fennel seeds

PICKLED TURNIPS

  • 3 turnips – peeled and mandolin sliced
  • 1 tsp salt
  • 1 tsp sugar
  • White wine vinegar

SPELT RISOTTO

  • 500g pearled barley
  • 1 ½ litres hot chicken stock
  • 100g pecorino – finely grated
  • 125g cold butter – diced
  • 2 Tbsp. crème fraiche
  • Olive oil
  • 2-3 shallots, finely sliced
  • ¼ cup chopped chives

 

METHOD

PRE-PREP:

Ox Tongue

  1. Heat pressure cooker with a good drizzle of olive oil.
  2. Season tongue with salt
  3. Sear in pressure cooker
  4. Add shallots, garlic, thyme, bay leaves, coriander seeds and fenne seeds.
  5. Cover with water, pop a lid on and cook on a medium heat for an 45 minutes to hour
  6. Remove the tongue and strain the liquid, reserving the stock.
  7. Cool, peel and trim.
  8. Cut in half lengthways, press between 2 trays, for min of 3 hours.
  9. Remove and cut into cubes of 1cm.

Turnips

  1. Put turnip slices into bowl.
  2. Add sugar, salt and splash of white wine vinegar
  3. Mix and set aside

FINISHING:

Tongue:

  1. Sauté tongue cubes till crispy.
  2. Remove and put into a tray, keeping warm.

Barley:

  1. Heat olive oil and butter in a pot, and sauté the shallots
  2. Add barley and toast briefly.
  3. Add all the stock. Bring to boil.
  4. Cook for about 30 minutes while stirriing every now and again.
  5. Add creme fraiche,
  6. Remove from heat, add chives and pecorino stirring gently .
  7. Finish with pickled turnips just before serving.
  8. Plate and serve

Recipe 2: Rabbit in a secret garden 

INGREDIENTS

 

RABBIT:

  • 1/4 of a rabbit per person – saddle, shoulder and leg separate (kidneys and livers reserved)
  • 2 litres of chicken stock
  • 2 skinless boneless chicken breast
  • 200ml whipping cream
  • olive oil
  • salt
  • couple of thyme sprigs
  • couple of bay leaves
  • 8 garlic cloves
  • 2 tbsp wholegrain mustard

 

SECRET GARDEN:

  • Baby spinach – 500kg
  • 2 cups panko breadcrumbs
  • zest of 2 lemons
  • Button mushrooms – 1kg
  • 2 sliced shallots
  • 1 clove garlic – finely chopped
  • Olive oil
  • balsamic vinegar
  • Truffle oil
  • Toasted b/crumbs with olive oil and lemon zest
  • Chives
  • Shimeji mushrooms
  • Wood sorrel
  • Tapioca multidextrose powder

METHOD

PRE-PREP:

  1. Break down and debone rabbit, keeping the kidneys and liver
  2. Debone the saddles
  3. Heat oil in a pot.
  4. Sear legs and shoulder meat and add salt, thyme sprigs, a couple of bay leaves and a few garlic cloves
  5. Deglaze with a little chicken stock and then add all the stock.
  6. Braise for 1 1/2 hours in an oven at 180-200 degrees.
  7. Remove the rabbit and set aside, reserving chicken stock/braising liquid for serving.
  8. Shred meat off legs and shoulders and place into a bowl.
  9. Add chicken breasts to food processor and blitz, slowly adding cream to form a paste.
  10. Remove from blender.
  11. Cover, cling wrap and refrigerate.
  12. Sauté liver and kidneys briefly and then chop roughly, chill
  13. Mix the chicken mousse, shredded leg meat and chopped livers
  14. Cover and chill till needed
  15. Season rabbit saddles with salt and spread with wholegrain mustard
  16. Roll about 1/2 cup of mousse filling into a thin sausage the length of the saddle and lay it along the spine of the saddle
  17. Roll the saddle neatly, making sure the filling is neatly tucked in the middle
  18. Roll up tightly in clingfilm, tying both ends. Chill till needed.
  19. Roll any left over mousse into walnut sized bowls, cover and set aside for later
  20. Add olive oil to a large saucepan and sauté the shallots
  21. Add the garlic and mushrooms and cook for about 20 minutes
  22. Add a generous splash of balsamic vinegar and a knob of butter and cook until reduced
  23. Season and pop through a blender

FINISHING:

Rabbit

  1. Add rabbit rolls to bamboo steamer and steam for 15 minutes.
  2. Remove from steamer, remove clingfilm
  3. Pan fry, seam side down first in lots of foaming butter until coloured
  4. Fry the left over stuffing balls until golden
  5. Slice the rabbit, laying it down on a metal tray. Season and pop back in the oven right before serving to warm through.
  6. Sauté shimejii mushrooms briefly in olive oil and season
  7. Place breadcrumbs, lemon zest, chopped chives and olive oil into pan
  8. Toast, remove and drain on paper towel
  9. Wilt spinach in tablespoon of olive oil and couple tbsp. of water.
  10. Drain well, removing any excess water
  11. Reduce reserved chicken braising liquid.
  12. Add tapioca powder to a bowl.
  13. Whisk in 3-4 Tbsp. olive oil or enough so it resembles snow.
  14. Plate and serve

Recipe 3: Cheesecake

INGREDIENTS

  • 250g full fat cream cheese
  • 500ml whipping cream
  • 200g castor sugar
  • 2 squirts vanilla paste/powder
  • flesh from 4 passion fruit
  • 300g castor sugar
  • 300g puffed rice

PRE-PREP:

  1. Heat cream with sugar and vanilla.
  2. Pour onto room temp cream cheese, whisk till smooth.
  3. Put into espuma gun and chill till needed.
  4. Warm castor sugar gently till caramel forms.
  5. Add in puffed rice.
  6. Stir and pour onto silicon mat. Spread out evenly. Allow to set.

S1 EP13 – UNDER AFRICAN SKIES

Neill’s ultimate client is an eccentric British IT millionaire who is the owner of, amongst many other properties,  Leobo Private Game Farm in the Limpopo Province.  Leobo, located at the top of an escarpment, is equal parts lodge and camp-for-adults, Leobo offers crocodile tug-o-war, quad bike racing, and helicopter paintball among other bizarre pastimes. At night, visitors head to the observatory, where a NASA-grade telescope provides breath-taking views of the heavens.  It is here that his client entertains family and friends or, more often than not, makes his home available for friends to use when they’re in South Africa.

While Neill has catered for this client at many of his homes, it is the Lodge that is the ultimate test of his skills.  It is a very long drive from Johannesburg so nothing can be forgotten. In this, the finale of the season, Neill will have to push himself to the limit in order to deliver the perfect dinner party for the guests.

Recipe 1: Smoked Mackerel Salad – serves 8

INGREDIENTSSmoked Mackerel Salad

DRESSING FOR SALAD: 

  • Juice of 1 lemon
  • 1 teaspoon mustard
  • 20ml grape seed oil
  • Salt and Pepper

 

DRESSING FOR MACKEREL:

  • 1 large dessert spoon cultured cream
  • 1 large dessert spoon creamed horseradish
  • juice ½ lemon
  • Salt to taste
  • 300g Smoked Mackerel
  • Red Cress – Garnish

 

METHOD

PRE-PREP:

Dressing for Salad:

Place lemon, mustard, grape seed oil, salt and pepper in large bowl

Whisk together to form a loose vinegrette

Set aside

Dressing for Mackerel:

Place cultutred cream, creamed horseradish, lemon juice and salt in large bowl

Whisk together to form a thick mixture

Set aside

FINISHING:

Place baby leaves into dressing for saladCoat leaves evenly

Flake Mackerel in large bowl with dressing

Coat pieces evenly

 

SERVING:

Place baby leaves on plate

Top with smoked mackerel

Dress with baby red watercress

 

 

 

Recipe 2: Sautéed Foie Gras with Vanilla Scented Cherries and Macadamia 

INGREDIENTS

 

Sauted Foie Gras with Vanilla Scented Cherries and Macadamia

FIG CHUTNEY:

  • 3 Tablespoons Coconut Blossom Sugar
  • 8 figs quartered

 

FOIE GRAS:

  • 600g Foie Gras

Handful of Lightly toasted, sliced macadamia nuts.

 

METHOD

PRE-PREP:

Fig Chutney:Place medium size sauce pan over heatAdd the sugar and allow to caramalise

Stir through and remove from heat

Add Figs

Place back on the hob and allow to simmer until soft and juicy

 

FOIE GRAS:

Remove Foie gras from fridge

Slice with hot knife into small even portions

Return back to fridge to cool

 

 

FINISHING:

Set a large pan over a high heatRemove foie gras from fridge

Grind with pink salt

Place foie gras in pan and sear for 30 seconds each side

Set on paper towel to drain

Place fig chutney on hob over medium heat

Allow to warm through before serving

 

SERVING:

Place fresh figs on plate

Add macadamia nuts

Spoon fig chutney on plate

Top with cooked foie gras

 

Recipe 3: Venison Wellington with Home-Grown Vegetables

INGREDIENTSVenison Wellington with Home-Grown Vegetables

VEGETABLES:

  • 10 baby beetroots
  • 10 sprigs thyme
  • Olive Oil
  • Salt
  • Pepper
  • 5 cloves peeled whole garlic
  • 15 baby carrots

VENISON FILLETS:

  • 4 Whole Venison fillets (500 each)
  • Generous pinch of salt
  • 1 Whole head garlic (pulled apart)
  • Splash Olive Oil
  • 8 Springs of fresh rosemary

Baby watercress (garnish)

 

METHOD PREPPING:

BEETROOT:

Place large pot with water over high heatBring to the boil then add the beetroot

Season with fresh thyme

Cook until a knife can poke or slide through without resistance

Remove beetroots from water

Rub with fingers to remove skin

Set aside

Add carrots to the beetroot liquid

Cook until tender

Drain and remove from heat

Oil and season all the vegetables whilst still warm

Add 4-5 cloves of garlic and mix together

Set aside till needed

 

VENISON:

Place venison in tray

Season with salt

Set two large trays over hob on medium heat

Add oil to pan to warm up

Place venison into hot pan to sear

Add garlic cloves and fresh rosemary to the pan

Turn the venison once caramelised

Add butter to the  pan and baste

Remove from heat

Allow to rest

 

 

FINISHING :

Pour out the resting liquid from venison into a small potPlace on the hob over low heatAllow to reduce

Place venison into oven to warm through

Remove from oven once warm

 

SERVING:

Set the vegetables on plate

Add baby watercress to the plate

Slice venison and dress the plate

Drizzle with the hot reduced liquid

 

 

Recipe 4: Mango and Banana Sorbet

INGREDIENTS

  • 1 Small watermelon diced and seeds removed
  • Squeeze of Lime
  • Drizzle of Agave Nectar
  • Splash of Whisky

METHOD

PRE-PREP

WATERMELON:

Place Watermelon, Lime, Agave and Whisky in vacuum pack bag

Lay flat in vacuum pack machine

Seal with machine

Set aside until needed

 

 

FINISHING:

Place frozen mango through juicer (Oscar Juicer) to form sorbet

Remove watermelon from vacuum pack bag

Place in large bowl with liquid

 

SERVING:

Place 4 cubes watermelon in bowl

Add spoonful of sobet

Finish with watermelon sauce

LANCEWOOD CHEESEBOARD

INGREDIENTS

  • 1 Block of Lancewood Cheddar Cheese1 Wedge of Lancewood Edam Cheese1 Wheel of Lancewood Goats Cheese

S1 EP12 – The finer things in life.

Barbara Lenhard, co-owner of Opulent Living – the brand for the finer things in life, calls on Neill to dazzle her girl-friends with a dinner at the beautiful Tulip House.  Catering for people who are used to only the very best may intimidate most, but for Neill it’s all in a day’s work and he’s certain that even the most discerning of diners will enjoy his menu.

Recipe 1: Saffron Risotto with Baby Squid and Fennel 

*Servers 8

INGREDIENTS

RISOTTO:Neill Anthony - Risotto with baby  squid

  • 250g Risotto Rice
  • 1.5l Hot Chicken Stock + Extra 500ml for finishing
  • 100g Butter
  • 150g Grated Pecorino
  • 20 Staimens Saffron
  • 1 Large dessert spoon mascarpone
  • Salt
  • 2 Bulbs finely sliced Fennel
  • Pinch of Maldon Sea Salt
  • Juice of ½ lemon

250g Sliced baby squid tubes and tentacles

Pea shoots (garnish)

METHOD

PRE-PREP:Risotto:Melt butter in largest pot possible

Add rice to pot

Stir until toasted over a medium heat

Add Saffron to rice in pot

Add boiling chicken stock to half cooked rice (agitate occasionally)

Remove rice from pot and lay out on a flat tray to cool

Place in fridge until needed

Place sliced fennel into large bowl

Season with maldon salt

Add lemon juice

Stir through

Set aside until ready to serve

 

FINISHING:

Place squid on dish cloth to draw any excess moisture outHeat up non-stick pan over high heat

Add olive oil and warm

Place squid into hot pan

Cook for 20 seconds

 

WHEN READY TO SERVE RISOTTO:

Gently warm rice in pot adding 1 ladle of hot chicken stock

Stir through with spatula

Once warm add mascarpone to pot

Stir to combine

Then add grated cheese

Stir to combine

Season to taste if necessary

 

SERVING:

Place ladle of risotto into serving bowl

Add fennel and pea shoots

Top with hot baby squid

Ready to serve

 

Recipe 2: Local Lamb Cannon with Potato Rosti, Sauteed Ceps and Chargrilled Broccoli

*serves 8

INGREDIENTS

Potato Rosti:Neill Anthony Local Lamb Cannon with Potato Rosti

  • 150g butter
  • 4 medium sized potato

 

LAMB:

  • 4 Lamb Cannons
  • 1 Head Garlic (cut in half)
  • 1 Tables spoon Olive Oil
  • 1 Large dessert spoon butter

CEPS:

  • 15 Medium Ceps (sliced)
  • 5ml Olive Oil

BROCCOLLI:

  • 500g Tenderstem Broccolli
  • Salt (season to taste)

 

PRE-PREP:

Melt butter in medium size sauce panRemove from heat once melted

Line clean large bowl with dish cloth

Grate potato into bowl

Squeeze dish cloth out to remove all excess water from potato

Place squeezed out potatoes into clean bowl

Add melted butter and mix through

Warm up non-stick pan

Place metal ring into pan

Spoon potato mixture into ring (about 1cm thick)

Cook for 5 minutes each side

Place in oven for 5 minutes at 180 degrees for 7-8 mins

Remove once done and set aside until needed

 

LAMB:

Place lamb on chopping board

Season with salt

Heat Olive oil in non-stick pan over a high heat

Sear lamb in hot pan

Add garlic and knob of butter to pan

Baste with foaming butter (3 minutes each side)

Remove from pan once roasted and set aside

 

CEPS:

Place sliced ceps on dish cloth to draw any excess moisture out

Heat up non-stick pan over high heat

Add olive oil and warm

Place ceps into hot pan

Cook for 30 seconds

Add to lamb tray and cover until needed

 

FINISHING:

Place lamb and rosti in oven to warm through

Bring large pot of  salted water up to boil

Add broccoli and cook for 7 minutes

Remove and place onto hot griddle pan

Cook for another 2 minutes
Remove lamb from oven and slice each cannon into 4

 

SERVING:

Season broccoli and place on plate

Add rosti and ceps

Top with lamb and finish off with sauce from tray

 

Recipe 3: Spiced Plums with Vanilla Crème and Peanut Honey Comb

INGREDIENTS

PLUMS:Neill Anthony - Spiced Plums

  • 10 Pitted and halved Plums
  • 1 teaspoon All spice Powder
  • 1 Cup dark brown Sugar
  • 1 Teaspoon Vanilla Powder
  • 50g Butter
  • 1 Large dessert spoon Cultured Cream

 

HONEYCOMB:

  • 350g Caster Sugar
  • 80ml Water
  • 60g Liquid Honey
  • 100g liquid Glucose
  • 12g Bicarbonate of Soda
  • Sugar thermometer and non-stick mat needed
  • 1 Cup salted peanuts

 

GARNISH:

  • 1 Large dessert spoon cultured cream
  • Seeds from 1 vanilla pod

 

PRE-PREP 

PLUMS:

Heat up non-stick pan over a medium heat

Add butter and allow to melt

Pour sugar, all spice and vanilla powder into pan

Stir through

Add plums into hot pan (flat side down)

Cook for 4 minutes or until soft

Place into oven for 5-6 minutes at 180 degrees

Remove once soft and cooked through

Place back onto hob over medium heat

Add spoons of cultured cream to mixtures

Cook through

Set aside and allow to cool

 

HONEYCOMB:

Heat honey, sugar, glucose, water in a large pot

Bring temperature up to 155 degrees

Add peanuts to pot

Gently stir in bicarb then turn off the heat

When all the bicarb is incorporated into mixture

Slowly pour onto a non-stick mat to cool

 

FINISHING & SERVING:

Place plums on hob over medium heat to warm through

Take seeds from a vanilla pod and place into a large bowl

Place cultured cream into bowl

Mix together

 Set plum in dessert bowl

Add shards of honey comb

Top with vanilla cultured cream

Final flourish of warm plum syrup

Recipe 1: Fresh Linguini with Lemon and Pecorino – serves 12

 

INGREDIENTSNeill Anthony - Fresh Linguini with Lemon and Pecorino

RAVIOLI

  • 550g pasta flour
  • 6 egg yolks
  • 4 eggs
  • Pinch crushed sea salt
  • Drizzle of olive oil
  • 300g shaved pecorino

PARSLEY DRESSING:

  • 100g Flat leaf parsley roughly chopped
  • 55ml olive oil
  • Juice of 3 Lemons
  • Salt and Pepper (to taste)

 

PRE-PREP:
PASTA:

Place flour in food processorAdd sea salt

Drizzle olive oil into egg mixture and whisk

Pour eggs into flour

Mix together to form a rough crumb

Remove from food processor and knead till a firm, smooth ball is formed (10min)

Cover with cling film and set to rest in fridge for 3 hours

 

PARSLEY DRESSING:

Place chopped parsely in mixing bowl

Add Cape Estate olive oil and lemon juice

Season with Salt and Pepper

Mix together

Set aside until ready to use

 

FINISHING:
LINGUINI:

Remove pasta from fridge, Unwrap and place on floured surface

Roll pasta out, using a pasta machine until lowest setting is reached

Cut with a sharp knife to form linguini (flat 0.5cm slices)

Lay on a floured surface until ready to boil.

To blanche linguini

Set water to boil on high heat in a large pot

Add linguini to salted boiling water and cook for 2min

Strain into bowl

SERVING:
Add parsley dressing to warm pasta

Mix through until linguini is coated

Serve and top with shaved pecorino

 

Recipe 2: Poached and Roasted Baby Chicken – serves 12

INGREDIENTSPoached and Roasted Baby Chicken

CHICKEN:

  • 12 baby chickens
  • 4l chicken stock
  • Bunch of thyme
  • 1 head garlic (halved)
  • Drizzle of Cape Estate Olive Oil

 

BUTTERNUT:

  • 2 diced and peeled butternuts
  • Salt
  • Pepper
  • Drizzle of Cape Estate Olive Oil

 

CABBAGE:

  • 2 Head’s diced (4cm) sweet heart cabbage
  • 3 Table spoons Cape Estate olive oil
  • Salt
  • Pepper
  • Dash of blackcurrant vinegar

PRE-PREP:

CHICKEN:

Prep chicken by removing legsPlace legs on roasting tray with salt and olive oilCook in oven for 40min at 180degreesSet aside until ready to serve

Bring chicken stock, thyme and garlic up to a boil

Poach chicken crowns in hot stock for 6 mins

Place crowns on roasting tray with salt and olive oil

Cook in oven for 20min at 180degrees

Set aside until ready to serve

 

PRE-PREP: Butternut

Place butternut on large oven tray

Season with olive oil, salt and pepper

Roast in oven for 25min at 180 degrees

Set aside until ready to plate

 

PRE-PREP: Cabbage

Set a large pot on hob over a medium heat

Add olive oil and heat up

Slowly add cabbage to pot

Allow to wilt and cook through whilst stirring

Season with salt and pepper

Add a dash of blackcurrant vinegar

Cook for a few more minutes

Remove from heat and set aside

 

FINISHING:

Remove chicken breast from crown and place in tray with chicken legsAdd chicken stock to tray for moistureHeat up large pot

Add cooked cabbage to warm through

Place butternut bake into oven at 180degrees

Warm through for 5min

 

SERVING:

Set roasted butternut on plate

Add cabbage

Top with chicken breast and leg

Finish off with a drizzle of chicken poaching liquid

Ready to serve

 

Recipe 3: Birthday Cupcakes – serves 12

INGREDIENTSNeill Anthony Birthday Cupcakes

CUPCAKES:

  • 250 g soft butter
  • 250 g caster sugar
  • 4 eggs
  • dash of milk
  • salt
  • 1 table spoon baking powder
  • 500g flour
  • 50g Ginger tea powder
  • 1 Vanilla pod (with seeds)

 

PLUM TOPPING:

  • 6 Half and pitted plums
  • 1 cup caster sugar

 

ICING:

  • 2 tubs Lancewood Cream Cheese
  • ½ cup icing sugar
  • Salt (pinch)

PRE-PREP:

Cream together butter and sugar until light in colour

Add ginger tea and seeds from the vanilla pod and mix through

Add 2 eggs until combined

Add half flour and half baking powder to mixture and stir through

Add the rest of the eggs to the mixture until smooth

Finish off with the rest of the flour, salt and baking powder and mix through until combined

Add a splash of cold milk and fold into mixture

Set aside in fridge until ready to use

 

FINISHING:

CUPCAKES:

Place cupcake batter into mouldsBake at 180degrees for 35min

Remove from oven and allow to cool on cooling rack

 

TOPPING:

Heat up non-stick pan

Add sugar and allow to caramalise

Add plums to pan (flat side down)

Coat plums with sugar

Cook for 8min or until soft

 

ICING:

Place cream cheese and icing sugar in bowl

Mix together until smooth

Ripple through any excess plum syrup

 

SERVING:

Place cupcakes on serving platter

Add warm roasted plum on top of cupacke

Top with icing and a pinch of salt

S1 EP10 – All things olive

The sun is shining and another supplier visit is on the cards. This time it’s to Willow Creek Olive Estate in the Nuy Valley to celebrate all things olive! After a tour of the olive groves and a tasting of the oils and olives, Neill prepares a delicious olive-based dinner for the family.

Recipe 1: Mushroom Ravioli, olive oil mousseline, cep jus

INGREDIENTSMushroom Ravioli, olive oil mousseline, cep jus

  • RAVIOLI
  • 550g pasta flour
  • 6 egg yolks
  • 4 eggs
  • Pinch crushed sea salt
  • 20 saffron stems
  • Drizzle olive oil

 

RAVIOLI FILLING:

  • 1kg Cooked chopped mushrooms
  • 2 Chicken breast
  • 1 Dessert spoon Cream cheese
  • 80ml Cream
  • Handful Parsley – chopped
  • Splash Truffle oil
  • Baby Gems leave wilted

 

OLIVE OIL MOUSSELINE:

  • 200ml Olive Oil
  • 3 x 5-min boiled eggs

 

CEP SAUCE

  • Dried Porchini mushrooms soaked in water
  • 200ml Fresh cream
  • Salt and Pepper
  • Splash Truffle oil
  • Dash Cognac

 

METHOD

PRE-PREP:

CEP SAUCE:

Place soaked mushrooms into medium size saucepan over a medium heat

Simmer for 15min

Add 200ml fresh cream

Season with salt

Blend together adding truffle oil

Pass through sieve

Add Cognac to sauce

Set aside till needed

 

PASTA:

Place flour in large mixing bowl

Add sea salt

Drizzle olive oil into egg mixture and whisk

Steep saffron in hot water for 2 min

Add water to whisked eggs

Pour eggs into flour

Mix together till a firm, smooth ball is formed

Remove from bowl and knead for 5-10min

Cover with cling film and set to rest in fridge for 3hours

 

FILLING:

Place cold cooked mushrooms in a large bowl with chopped parsley

In a blender, combine raw chicken with cream till smooth,

Add in to cooked mushroom mixture, stir together, add truffle oil

Roll mixture into 60g balls

Set in fridge till required

 

FINISHING:

MOUSSELINE:

Take boiled eggs,

Place in blender,

Start blending, while slowly adding olive oil till emulsified (thick consistency)

 

RAVIOLI:

Remove pasta from fridge

Unwrap and place on floured surface

Roll pasta out, using a pasta machine till lowest setting is reached

Cut with a pastry cutter

Lay on a floured surface, cover with double layer of cling film till ready to use

 

Assembling the Ravioli:

Remove mushroom mixture from fridge

Egg wash the pasta disc with a pastry brush

Place mushroom ball in the center of the egg wish pasta disc

Cover with a second pasta disc

Gently enclosing the mushroom mixture by sealing the edges, avoiding any air pockets

Set aside on floured surface once competed

Ready for blanching

 

To blache ravioli;

Set water to boil on high heat in a large pot

Prepare another bowl of ice water to refresh ravioli after blanching

Add ravioli to boiling water carefully

Cook for 1min

Remove with slotted spoon

Place into ice water to stop cooking process

 

BABY GEM:

Warm up a medium size sauce pan,

Wilt baby gem lettuce and drain

 

SERVING:

Once ready to serve;

Place ravioli back into boiling water for 4min,

Remove from water with a slotted spoon,

Ready to plate

 

In another pan, gently warm the mushroom sauce up.

 

Place baby gem into plate,

Top with moussaline

Add ravioli to plate

Finish off with a dot of moussaline and mushroom sauce

Serve immediately.

Recipe 2: 90 minute beef fillet, braised oxtail, baked potato and baby spinach

INGREDIENTSIMG_1397

BEEF:

  • 1 Whole beef fillet
  • Handful Course salt
  • 1 Tablespoon Mascarpone
  • 15 Baby potatoes
  • 1 Head garlic (cut in half)
  • Bunch Thyme
  • 500g Baby spinach

OXTAIL:

  • 4kg Oxtail
  • 3 Peeled and quartered red onions
  • 1 Head garlic (cut in half)
  • Large bunch thyme
  • 2L Chicken Stock
  • Salt
  • Pepper
  • Olive Oil
  • Handful Parsley

 

PRE-PREP:

BEEF:

Season board with course salt

Roll beef into salt till coated

Roll and wrap fillet tightly with cling film

Leave to rest In fridge till needed

 

Remove from fridge and unwrap

Set oven to 90 degrees

Place fillets on oven tray

Roast for 90min at 90 degrees

Remove and allow to rest

 

OXTAIL:oxtail and roasted potatoes

Heat olive oil up in a large pot over a medium heat

Season oxtail with salt and pepper

Brown oxtail in pot, remove once browned

Add onion and garlic to pot and allow to cook off 4-5min

Add oxtail back into pot with fresh thyme

Cover with hot stock

Simmer over a low heat for 3 hours (stirring occasionally)

Remove from heat once meat is soft and tender

 

POTATOES:

Place potatoes into a medium sauce pan

Season and cover with water

Cook till soft

Remove from stove, drain and set aside.

 

FINISHING:

Heat up a non-stick griddle pan

Place beef fillets in pan

Sear till charred marking appear

Remove and allow to rest before serving

 

Before serving potatoes;

Place potatoes in medium size non-stick pan

Roast with garlic and thyme

Remove from pan once warmed through

Add to oxtail ready to serve

 

Finishing off the beef;

Take 1 ladle of oxtail braising liquid and heat up in a small sauce pan

Add mascarpone to sauce

Stir to combine

 

SERVING:

In a large sauce pan, wilt baby spinach over a medium heat

Remove from pan and allow to drain

 

Place on plate once drained and serve with slices of beef fillet

Finish off with beef sauce

 

Chop parsley and mix with olive oil

Place on top of oxtail to finish off.

Recipe 3: Orange and olive oil cake, blood oranges and crème fraiche

INGREDIENTSOrange & Olive oil cake

  • 4 whole oranges
  • 100ml Willow Creek Blood Orange Olive Oil
  • 50ml Willow Creek Directors Reserve
  • 4 Whole eggs
  • 200g icing sugar
  • 200g almond flour
  • 1 Teaspoon (5ml) baking powder
  • Pinch Salt

 

Icing sugar, for dusting

  • 2 Dessert spoons Crème Fraiche
  • Drizzle Blood orange oil
  • Dash Whisky

METHOD:

Preheat oven to 175 degrees

Place the oranges into a small saucepan and cover with water

Simmer over a medium heat for about an hour

Remove from heat, allow to cool

Place the oranges into blender and puree

Add eggs and oils whilst blending

Add dry ingredients to blender till incorporated (or mix together in a large bowl)

Pour into round, greased cake tin

Place in oven and bake to 40-45min or till cake has risen and is light brown in colour

Remove from oven when cooked

 

For the crème fraiche;

Mix blood orange oil together with crème fraiche

Add a splash of whisky and combine

Dust with icing sugar and serve with crème fraiche mixture.

Neill sends out a Tweet that MasterChef SA winner and renowned food blogger, Kamini Pather, will be joining him to host a Secret Supper. First come, first served as Neill selects who will be joining the evening festivities at a secret location.

DINNER MENU:

  • Canapes – risotto bon bons
  • BBQ Chicken thighs with sweetcorn and tarragon
  • Vanilla poached angelfish with confit tomatoes
  • Kamini’s Chocolate torte

Recipe 1: Risotto Bon Bons

INGREDIENTS 
Crispy Risotto bon bons

RISOTTO:

  • 250g Risotto Rice
  • 1l Chicken Stock
  • 200g Butter
  • 150g Grated Pecorino
  • Salt

 

PANE`:

  • 3 Cups Flour
  • 8 Eggs, whisked
  • Breadcrumbs

PESTO MAYONAISE:

  • 1 large dessert spoon Pesto
  • 2 large dessert spoon Mayonnaise
  • Squeeze 1 Lemon

PRE-PREP:

Melt 50g butter in the largest pot possible

Add rice to pot

Stir until toasted over a medium heat

Add boiling chicken stock to rice

Stir till stock is evaporated and rice is well cooked

Add the rest of butter 50g at a time to the rice

Then add grated cheese

Stir to combine

Season to taste, if necessary

Remove rice from pot and lay out on a flat tray

 

Allow to cool down completely

Once chilled, roll rice into little balls

(large marbles)

Put risotto balls back on tray

Place tray into freezer (over night)

 

FINISHING:

To prepare risotto balls for frying (Pane`):

Remove tray from freezer

Roll balls in flour, then dip into eggs

Coat balls in breadcrumbs, place back in freezer (until ready to use)

 

To Fry:

Remove risotto bon bons from freezer

Fry in oil till golden brown

Set bon bons on tray, lined with paper towel to drain

Season and serve with mixture of pesto, mayonnaise and squeeze lemon.

 

Recipe 2: BBQ Chicken thighs with sweetcorn and tarragon

INGREDIENTSBBQ Chicken with sweet corn

CHICKEN:

  • 12 chicken thighs
  • Knob grated fresh Ginger
  • red onion quartered
  • 2 lemons (cut in half) and juice
  • 2 Chilli (cut in half)
  • Salt

 

GLAZE:

  • 2 large dessert spoons Cayenne pepper
  • 2 large dessert spoons Ground Cumin
  • 2 large dessert Plum jam
  • Drizzle Olive oil
  • Salt

 

SWEETCORN:

  • 4 sweetcorn cobs
  • 10 stalks fresh tarragon
  • 1 Chilli chopped
  • !/2 red onion chopped
  • Juice 2 limes
  • Lancewood Feta (crumbed to finsh off)

 

METHOD

PRE-PREP:

Boil sweet corn on cob with fresh tarragon

Remove cob from water

Cut kernels off cob

Add chopped chilli, squeeze lime and red onion

Set aside

 

CHICKEN:

Place chicken thighs into large tray

Drizzle with olive oil and season with corse salt

Add red onion, chilli, lemons, squeeze of 1 lemon, water and fresh ginger

Rub in marinade and glaze and cover with foil

Place in oven and cook at 180 degrees for 45min

 

FOR THE GLAZE:

In a pestle and morter mix all spices, jam and oil together to form a paste.

 

FINISHING & SERVING:

Heat non stick pan over a high hear

Take chicken out of oven

Remove chicken skin and lay on serving board

Sear chicken thighs in hot pan, add spoonful of plum jam to chicken sauce, then pour into pan with chicken (reserving lemon and red onion)

Spoon sweet corn onto serving board before topping with glazed chicken thighs

Sqeeze cooked lemon over chicken

Top with feta for final flourish

Ready to serve.

 

Recipe 3: Vanilla poached fish with confit tomatoes and baby spinach

INGREDIENTSVanilla poached fish

FISH:

  • 4 Angel fish fillets
  • 1l mineral water
  • Salt for seasoning
  • 5 Thyme stalks
  • 4-5 Saffron stamen
  • ½ teaspoon Vanilla powder
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • Juice of 1 lemon
  • Tarragon stalks (from sweetcorn)
  • 5 Crushed garlic cloves
  • 2 Squeezed limes (from sweetcorn)

 

TOMATO CONFIT:

  • 25 baby tomatoes (cut in half)
  • 8 crushed garlic heads
  • handful fresh thyme
  • 1 chilli quatered
  • Oilive oil
  • Generous pinch sugar
  • Dash soya sauce

 

METHOD

PRE-PREP

Place chilli, baby tomatoes and oil in large bowl

Add thyme, garlic, sugar, soya sauce

Place on a baking tray, bake at 120 degrees for 30 minutes.

 

FISH:

Pour mineral water into poaching pan over a medium heat

Heavily season with salt

Add vanilla, garlic, thyme, lemon, fennel seeds, corriander seeds, saffron.

Place squeezed limes into poaching liquid

Bring liquid up to boil

Set aside

 

Recipe 4: Flourless chocolate torte

INGREDIENTSFlourless Chocolate torte

  • 450g dark chocolate chopped
  • 1/2 cup salted butter
  • 5 large eggs, separated
  • 1 teaspoon vanilla powder
  • 1/4 cup caster sugar
  • Unsweetened cocoa for dusting
  • 1 tub mascarpone
  • Zest 1 lime
  • Pinch black pepper

METHOD

Preheat oven to 170 degrees

Grease baking tin with melted butter

Then dust with unsweetened cocoa and set aside

Over a low heat, melt chopped chocolate and butter in medium size saucepan, stirring continuously until smooth

Whisk together egg yolks and vanilla in a large bowl

Gradually stir in the chocolate mixture;

Whisk till mixture is combined or comes together

 

Place egg whites into electric mixer and whisk at a high speed until soft peaks begin to form

Slowly add sugar to the egg whites, beating until all the sugar dissolves and mixtures reaches stiff peaks.

 

Fold one-third beaten egg white mixture into chocolate mixture;

Carefully fold in remaining egg white mixture until combined.

 

Evenly spread batter into baking tin, and cook at 170 degrees for 25min

Remove from oven and allow to chill on a wire rack.

 

In the meantime prepare the mascarpone mixture

Place tub of mascarpone into mixing bowl

Whisk together with zest of 1 lime and a pinch of pepper.

 

When ready to serve, cut torte into even pieces and serve with mascarpone.
